Okonomiyaki (Japanese Cabbbage Pancake)

This simple Okonomiyaki recipe combines shredded cabbage, green onions, and tempura flakes in a delicious savory pancake. For a lighter, low-sugar option, simply use cabbage and egg, and skip the sauce.

  • Mix all your batter ingredients together in a bowl.
    • 1 cup all purpose flour (120 g)
    • 1 tsp salt (6 g)
    • 1 tsp sugar (4 g)
    • 1/4 tsp baking powder (1 g)
    • 3/4 cup dashi (180 g)
    • 3 eggs (100 g)
  • Mix in chopped cabbage and green onions.
    • 1 cup cabbage, chopped (70 g)
    • 1 stalk green onions, chopped (15 g)
  • Add the mixture onto pan and cook one side on medium heat for 5 minutes.
    • When the bottom side is browned and crispy, flip over and cook the other side for a few more minutes until reaching the desired pancake texture.
      • For the sauce mix ketchup, oyster sauce, sugar and Worcestershire sauce and drizzle onto the pancake.
        • 1/2 cup ketchup (120 g)
        • 1/4 cup oyster sauce (60 g)
        • 2 1/2 tbsp sugar (32 g)
        • 6 tbsp Worcestershire sauce (80 g)
      • Top with tempura flakes and enjoy!
        • 4 tbsp tempura flakes (5 g)
