  • Add chicken breasts to a bowl and season with salt, pepper, cayenne pepper, thyme, garlic powder, and smoked paprika. Mix well, ensuring all sides of the chicken are covered thoroughly.
    • 4 chicken breasts (600 g)
      (can also use chicken thigh)
    • 1/4 tsp salt (1.50 g)
    • 1 tbsp garlic powder (12 g)
    • 1/2 tbsp thyme (1.50 g)
    • 1 tbsp smoked paprika (7 g)
    • 1/2 tsp cayenne (1 g)
  • Start boiling some water and prepare your pasta according to package instructions.
    • 2 1/2 cup penne (200 g)
      (or any pasta of your choice)
  • Add olive oil to a medium heated pan and cook the chicken for about 2-3 minutes on each side until browned. Set the chicken aside to finish cooking in the sauce later.
    • 1 tbsp olive oil (12 g)

  • To the same pan you used for chicken, add yellow onion and butter. Mix well. Then season with salt, pepper, and thyme.

    • 1/8 tsp salt (0.75 g)
    • 1/4 tsp black pepper (0.50 g)
    • 1 tsp thyme (1 g)
  • When the onions turn translucent, add tomato paste and let the tomato paste brown for 1 - 2 minutes.
    • 2 tbsp tomato paste (30 g)
  • Add in heavy cream, chicken bone broth, sun-dried tomatoes, and fresh basil. Stir to incorporate.
    • 3/4 cup heavy cream (180 g)
    • 3/4 cup chicken broth (180 g)
    • 1/2 cup sun-dried tomato (120 g)

  • Add your partially cooked chicken back into the pan, spoon the sauce over the chicken, and put the lid on for about 4-5 minutes until the chicken is cooked through (to 165F or 74C).
    • Turn off the heat. Remove the chicken from the pan, and add in your cooked pasta.
      • Stir pasta to incorporate the sauce. You may (optionally) use some of the starchy pasta water from cooking your pasta to help thicken the sauce if needed.
        • Plate it up the pasta, top it with sliced chicken, fresh basil, and some parmesan cheese. Add some more of that sauce (optional) and enjoy!
