  • Place beef into a bowl with all the ingredients for the marinade. Toss until well coated and set aside.
    • 0.50 lb beef sirloin, sliced into strips (225 g)
    • 1 1/2 tbsp light soy sauce (23 g)
    • 1 1/2 tsp mirin (7.50 g)
    • 1 1/2 tsp sesame oil (7.50 g)
    • 1 1/2 tsp dark brown sugar (7.50 g)
  • Cook the sweet potato noodles in a pot of boiling water for about 3 - 5 minutes then strain and run under cold water until cool.
    • 0.50 lb sweet potato noodles (225 g)
  • Transfer to a mixing bowl and toss through sesame oil.
    • 1 tbsp sesame oil (15 g)
  • Heat some oil in a pan over high heat and stir fry the beef until just cooked through. Once cooked, remove and place into the same bowl as the noodles.

  • In the same pan over high heat, heat some oil and stir fry onion, carrot, and the white part of the green onion with some salt and pepper.

    • 1/4 tsp salt (1.50 g)
    • 1/4 tsp black pepper (1 g)
  • Add the mushroom and minced garlic and stir fry for a further 2 minutes.
    • 2 clove garlic, minced (6 g)
  • Add the spinach and toss until wilted, then add the noodles and cooked beef back in along with all the ingredients for the stir fry sauce.

    • 0.50 lb beef sirloin, sliced into strips (225 g)
    • 3 tbsp soy sauce (45 g)
    • 2 tbsp dark brown sugar (30 g)
    • 1/2 tsp salt (2.50 g)
    • 1 tbsp sesame oil (15 g)
  • Cook for a further 2 minutes before tossing through some sesame seeds and the green sections of green onions.
