- Place the thinly sliced beef into a bowl with the light soy sauce, mirin, sesame oil, and dark brown sugar. Toss well to coat evenly and let it marinate for 10–15 minutes while you prepare the other ingredients.
- 0.50 lb beef sirloin, sliced into strips (225 g)
- 1 ½ tbsp light soy sauce (23 g)
- 1 ½ tsp mirin (7.5 g)
- 1 ½ tsp sesame oil (7.5 g)
- 1 ½ tsp dark brown sugar (7.5 g)
- Cook the sweet potato noodles in a large pot of boiling water for 3–5 minutes, or until just tender and chewy. Drain well and rinse under cold water to stop the cooking.

- Transfer the noodles to a mixing bowl and toss with a small drizzle of sesame oil to keep them from sticking together.

- Heat a little neutral oil in a large pan or wok over high heat. Add the beef in a single layer and stir fry for 2–3 minutes, until just cooked through and lightly browned. Remove and place it into the bowl with the noodles.

- In the same pan, add a bit more oil if needed. Stir fry the onion, carrot, and the white parts of the green onion with a pinch of salt and black pepper for 2–3 minutes, until slightly softened.

- Add the mushrooms and minced garlic and cook for another 2 minutes, stirring frequently, until fragrant and tender.

- Add the spinach and toss until wilted. Then return the noodles and cooked beef to the pan. Pour in the soy sauce, dark brown sugar, salt, and sesame oil for the stir fry sauce and toss everything together until evenly coated.

- Stir fry for another 2 minutes until everything is glossy and heated through. Taste and adjust seasoning if needed, then sprinkle with sesame seeds and the green tops of the green onions. Toss lightly and serve warm.
