  • Finely chop the onion and spread it evenly on a heat-resistant plate. Microwave the onion uncovered for 2 minutes. After heating, allow it to cool completely.
    • 1/2 onion, chopped (75 g)
  • Put mixed ground meat, the chopped onion, and the other patty ingredients in a frying pan and knead thoroughly with a rubber spatula until sticky.
    • 0.66 lb ground meat (300 g)
    • 1/2 onion, chopped (75 g)
    • 1/2 tsp salt (3 g)
    • 1/2 tsp black pepper (1 g)
    • 1 egg (50 g)
    • 3 tbsp breadcrumbs (30 g)
    • 2 tbsp milk (30 g)
    • 1/2 tsp nutmeg (1 g)
  • Divide the mixture into two parts, shape into oval patties while removing air, and arrange in the frying pan. Sear both sides over medium heat, and once browned, place on aluminum foil.
    • Wipe excess oil from the frying pan, add the sauce ingredients, and mix well until the potato starch lumps disappear. Heat until boiling, then simmer over medium heat for 1-2 minutes while stirring until thickened.
      • 0.42 cup water (100 g)
      • 5 tbsp tonkatsu sauce (75 g)
        (Japanese-style Worcestershire sauce)
      • 1 tbsp ketchup (15 g)
      • 1/2 tsp instant coffee (1 g)
      • 1/2 tbsp sugar (6 g)
      • 1 tsp consomme (3 g)
        (soup stock)
      • 1 tsp potato starch (3 g)
    • Pour the sauce over the cooked patties, cover with aluminum foil, fold edges three times to seal well. Bake in the preheated oven at 410°F (210°C) for 20 minutes.
