  • In a pan, combine water, hondashi, mirin, soy sauce, sake, and sugar. Simmer on medium heat and stir until sugar is dissolved.
    • 1/2 cup water (120 g)
    • 1/2 tsp hondashi (1.50 g)
      (optional)
    • 5 tbsp mirin (100 g)
    • 5 tbsp soy sauce (60 g)
    • 4 tbsp sake (60 g)
    • 1 1/2 tbsp sugar (18 g)
      (optional) (can substitute with any sweetener)
  • Add minced ginger and onions, and cook for 5 minutes until the onions have softened.
    • 1/2 inch ginger, minced (6 g)
    • 1/2 onion, thinly sliced (150 g)
  • Add sliced beef and cook for another 5 minutes until the beef is fully cooked.
    • 0.50 lb beef, thinly sliced (225 g)
  • Serve over rice and add your toppings.
    • 1 egg, yolk (15 g)
      (optional)
    • 1 stalk green onion (12 g)
      (to taste)
    • 1 tsp sesame seed (3 g)
      (to taste)
