  • Heat vegetable oil in a medium pot over medium-high heat. Add beef in a single layer and sear until browned on all sides, about 2-3 minutes. Transfer to a plate and set aside.

  • In the same pot, reduce heat to medium and add garlic and onion. Sauté until the onion becomes translucent, about 2-3 minutes, stirring frequently.

  • Add carrot and potato to the pot. Sauté for 2 minutes, stirring occasionally to prevent burning.

  • Pour in the dashi stock and bring to a gentle boil. Reduce heat to low, cover, and simmer until the vegetables are tender but still hold their shape, about 5-7 minutes.

  • Break the curry cubes into pieces and add to the pot. Stir constantly until completely dissolved and the sauce begins to thicken.

  • Return the seared beef and any accumulated juices to the pot. Add mirin and soy sauce, stirring to combine. Simmer for an additional 2-3 minutes until the beef is heated through and the sauce reaches the desired consistency.

  • While the curry simmers, prepare the udon noodles according to package instructions.

  • Divide the heated udon noodles among three serving bowls. Ladle the curry beef mixture generously over the noodles. Garnish with chopped green onions and a sprinkle of shichimi togarashi. Add tenkasu if desired.
