15-Minute Chili Garlic Noodles

How can plain noodles and a simple sauce taste this good? Almost every internet chef has made their version of "chili garlic" or "chili oil" noodles, and for good reason. It's a dish that punches way above it's weight class in flavor for how little time it takes and with only a few staple Chinese ingredients. This is a dish that you can (actually) have ready in 15 minutes.

  • Fill a medium pot with water and place it on high heat to bring to a boil for the noodles. While the water is heating, prepare your sauce.
    • In a medium, heat-proof bowl, add the minced garlic, chopped white/light green parts of the green onions, Chinese chili flakes, and ground Sichuan peppercorn (if using).
      • 2 clove garlic, grated or minced (6 g)
      • 2 stalk green onion, chopped (30 g)
        (white/light green parts for sauce, dark green parts for garnish)
      • 1 tbsp chili flakes, crushed (6 g)
        (preferably chinese or sichuan chili flakes, to taste)
      • 1 tsp sichuan peppercorn, ground (3 g)
        (optional)
    • Pour the light soy sauce, dark soy sauce, Chinese black vinegar, and brown sugar over the dry ingredients in the bowl. Give it a gentle stir.
      • 2 tbsp light soy sauce (32 g)
      • 1/2 tbsp dark soy sauce (8 g)
        (for color)
      • 1 tsp black vinegar (5 g)
        (Chinkiang vinegar, can substitute with rice vinegar)
      • 1 tsp brown sugar (4 g)
    • In a small saucepan, heat the neutral oil over medium-high heat. The oil is ready when it shimmers and you see the first wisp of smoke. Carefully pour the hot oil directly into the bowl over the sauce ingredients. It will sizzle and become very fragrant. Stir well to combine.
      • 2.5 tbsp neutral oil (30 g)
        (vegetable oil, avocado oil, etc)
    • Once the water is at a rolling boil, add your noodles and cook according to package directions. Just before draining, reserve about 1/4 cup of the starchy noodle water. Drain the noodles well.
      • 1 packet noodles, dried (250 g)
        (can substitute with your preferred noodles)
    • Immediately add the hot, drained noodles to the bowl with the chili oil sauce. Add a tablespoon or two of the reserved noodle water to help the sauce emulsify and coat the noodles. Toss everything together until every strand is coated.
      • Serve immediately, garnished with the sliced dark green parts of the green onions, sesame seeds, and optional cilantro and crushed peanuts. Enjoy!
