  • Cut your protein of choice against the grain and into thin strips. Add the rest of the ingredients for the marinade and set aside.
    • 1 lb chicken (454 g)
    • 1 tbsp soy sauce (17 g)
    • 1 tsp oyster sauce (5 g)
    • 1 tsp oil (4.60 g)
    • 1 tsp cornstarch (2.50 g)
    • 1/2 tsp baking soda (3 g)
    • 1 tsp garlic, minced (2 g)
    • 1 tsp ginger, minced (2 g)
  • Cut your veggies into thin strips and set aside.
    • 1/2 cup red bell pepper (75 g)
    • 1/2 cup carrots (61 g)
    • 1/2 cup shiitake mushrooms (35 g)
    • 1/2 cup snow peas (50 g)
    • 1/2 cup green onion (50 g)
  • Mix together the sauce ingredients and set aside.
    • 3 tbsp soy sauce (51 g)
    • 2 tbsp oyster sauce (36 g)
    • 2 tsp dark soy sauce (11 g)
    • 1 tsp sesame oil (4.50 g)
    • 2 tbsp broth (30 g)
    • 1 tsp sugar (4 g)
    • white pepper
      (to taste)
  • Heat up your wok with some oil and add your protein in. Spread it out to create a single layer and allow it to sear. Once you see it cooking around the edges, sauté and spread back out to cook for another minute. Remove your meat and set aside.

  • Add in more oil if needed then add in the remaining garlic and ginger. Deglaze with Shaoxing wine and allow it to cook out.
    • 1 tsp garlic, minced (2 g)
    • 1 tsp ginger, minced (2 g)
    • 2 tbsp shaoxing wine, for deglazing (30 g)
      (or mirin or sherry)
  • Add in your harder veggies, such as carrots, bell peppers and whites of the green onions, and cook for a minute.
    • 1/2 cup red bell pepper (75 g)
    • 1/2 cup carrots (61 g)
    • 1/2 cup green onion (50 g)
  • Meanwhile, cook your noodles according to package directions.
    • 1 lb egg noodles (454 g)
  • Add in your remaining veggies and sauté. Add in your noodles, sauce, and protein and sauté to combine.
    • 1/2 cup shiitake mushrooms (35 g)
    • 1/2 cup snow peas (50 g)
  • Garnish with green onions and enjoy!
    • 1/2 cup green onion (50 g)
