  • Finely dice the onion and mince the jalapeño pepper, removing the seeds for less heat. Measure out all seasonings into a small bowl.
    • 1/2 onion, finely diced (75 g)
    • 1 jalapeno, seeded and minced (20 g)
  • Heat olive oil in a large pot or Dutch oven over medium heat. Add the ground beef and cook until browned, breaking it into small pieces with a wooden spoon, for about 5-7 minutes.

  • Add the diced onion and minced jalapeño to the pot with the beef. Sauté for 5 minutes until the vegetables begin to soften.
    • Add all seasonings including chili powder, cumin, paprika, garlic powder, salt, and black pepper to the meat mixture and stir to coat evenly. Cook for 1 minute until fragrant.

    • Stir in the tomato sauce, diced tomatoes with their juice, and beef bone broth. Add the adobo sauce from the canned chipotle peppers.

    • Drain and rinse the kidney beans, then add them to the pot. Stir to combine all ingredients thoroughly.

    • Bring the mixture to a boil, then reduce the heat to low. Cover partially with a lid and simmer for at least 25 minutes, stirring occasionally. For deeper flavor, simmer for 45-60 minutes.
      • Taste the chili and adjust the salt, pepper, or spice levels as needed.
        • Ladle the hot chili into bowls. Garnish each serving with a dollop of Greek yogurt, a sprinkle of cheddar cheese, and a generous pinch of chopped green onions and cilantro.
