Step 1
Start by combining flour, cornstarch, salt, and garlic powder.- 1 1/2 cup flour, all purpose (180 g) (additional for dusting)
- 1 cup cornstarch (120 g)
- 2 tsp garlic powder (6 g)
- 1/4 tsp salt (1 1/2 g) (to taste)
Step 2
Take out half of this mixture and mix it with water and hot sauce until you get a thin, red batter. Set this aside.- 1 cup water (240 g)
Step 3
Season your shrimp with salt and pepper. Sprinkle on some flour on top so the batter sticks.- 1 lb shrimp, peeled and deveined (454 g)
- 1/4 tsp salt (1 1/2 g) (to taste)
- 1/4 tsp black pepper (1 g) (to taste)
Step 4
Mix the shrimp first in the wet batter and then the dry batter.- 1 lb shrimp, peeled and deveined (454 g)
Step 5
Fry shrimp in hot oil until crispy.- 1 lb shrimp, peeled and deveined (454 g)
Step 6
Make your dressing and then toss in your shrimp with some green onion.- 1/2 cup mayonnaise (120 g) (Japanese Kewpie mayo or American)
- 1/4 cup sweet chili sauce (80 g) (Lee Kum Kee brand)
- 1 stalk green onion, chopped (15 g)
