Bang Bang Air Fryer Chicken

Bang Bang Air Fryer Chicken

Bang Bang chicken is a popular dish known for its bold, spicy, and tangy flavors. Originating from Sichuan cuisine in China, it traditionally involves poached chicken that is shredded and served with a flavorful sauce. The modern viral version, which gained popularity online, typically features crispy fried chicken pieces tossed in a creamy, spicy sauce made from mayonnaise, sweet chili sauce, sriracha, and/or hot sauce. This fusion of textures and flavors makes Bang Bang chicken an irresistible treat, perfect as an appetizer, snack, or main course. The name "Bang Bang" is believed to come from the sound of the mallet used to tenderize the chicken in the traditional recipe.

  • Score the chicken breasts about 1/8-inch deep and 1/2-inch apart with cross-hatch cuts. Alternatively, you can cut the chicken into cubes and put them on a skewer.
    • 3 chicken breasts (600 g)
  • Mix all the spices together (garlic powder, onion powder, paprika, salt) and season the chicken breasts on all sides.
    • 1 tsp garlic powder (3 g)
    • 1 tsp onion powder (3 g)
    • 1 tsp paprika (2 g)
    • 1 tsp salt (5 g)
  • Make the bang bang sauce - mix together the mayonnaise, sweet chili sauce and chili garlic sauce or sriracha.
    • 1 cup mayonnaise (220 g)
    • 1/2 cup sweet chili sauce (120 g)
    • 2 tbsp chili garlic sauce (30 g)
      (or sriracha)
  • Place the chicken breasts in the air fryer basket and spread the bang bang sauce on top, reserving about a couple tablespoons of the sauce for drizzling on top when serving the dish. Air fry at 390-400F (198-204C) for about 20 minutes (flipping after 10 minutes) depending on the size of the chicken breasts or until the internal temperature hits 165F (74C).
    • Once done, let the chicken rest for about 10 minutes, then serve over white rice, drizzle with the reserved bang bang sauce, garnish with some cilantro or green onions and enjoy!
