  • In a bowl, combine chicken pieces with grated garlic, ginger, soy sauce, Shaoxing wine, five spice, white pepper, salt, sugar, and egg white. Let it marinate for at least 30 minutes or overnight in the fridge.
    • 1 lb chicken thigh, cut into small pieces (454 g)
    • 3 clove garlic, grated (9 g)
    • 2 inch ginger, grated (25 g)
    • 1 tbsp soy sauce (15 g)
    • 2 tsp five spice powder (4 g)
    • 1 tsp white pepper (2.5 g)
    • 1 tsp salt (6 g)
    • 1/2 tsp sugar (2 g)
    • 1 egg white (33 g)
  • Preheat the air fryer to 380°F (193°C).
    • In a plate, add coarse potato starch. Toss the marinated chicken in potato starch until well coated.
