  • Preheat the oven or air fryer to 400F (204C)
    • In a bowl, combine water and salt, then add the cubed tofu to soak for 15 minutes. The salted water will slightly season the tofu and help draw out moisture, making the tofu crispier when air fried later.
      • 2 cup water (240 g)
      • 1 tbsp salt (18 g)
      • 1 block tofu, cubed (400 g)

    • In another bowl, prepare the sauce by adding black vinegar, soy sauce, chili oil, green onion, garlic, red pepper, and sesame seeds.
      • 3 tbsp black vinegar (45 g)
      • 2 tbsp light soy sauce (30 g)
      • 1 1/2 tbsp chili oil (21 g)
      • 1 stalk green onion, chopped (15 g)
      • 2 clove garlic, minced (6 g)
      • 1 tbsp red pepper, crushed (5 g)
      • 1/2 tbsp sesame seeds (4.50 g)
    • In a pot, add neutral oil and heat it to 300°F, or until the oil begins to shimmer. Once the oil is heated, carefully pour it over the sauce to fry the aromatics.
      • 4 tbsp neutral oil (48 g)
        (vegetable oil, avocado oil, etc)
    • Place the tofu in the air fryer basket and cook for 25 minutes, flipping the tofu halfway through. For extra crispiness, you can optionally spray or drizzle a bit of oil on the tofu before air frying.
      • Once the tofu is crispy, remove it from the air fryer and serve with sauce drizzled over the top. Garnish with fresh cilantro and enjoy!
