80/20: Steak and Potatoes

Cooking doesn’t need to be hard or complicated. Often, you’re simply looking for a recipe that gets you most of the way there with minimal effort, hence 80/20.

But air fried steak? Yes. Just try it. 🙂

Pretty sure if Gordon saw you do this in Hell’s Kitchen you’d be thrown out or yelled at (probably both), but thankfully in the safety of your own kitchen, you’re free to take shortcuts that still give you delicious results.

  • Preheat the air fryer to 400°F (204°C).
    • Start boiling a pot of water with enough to fully cover the potatoes, approximately 5 cups (1200g). Once the water is boiling, generously salt it with 1 tablespoon (15g) of salt.
      • Carefully drop the quartered potatoes into the boiling water, then reduce the heat to a simmer and cook for 5 minutes.
        • 1 russet potato, quartered (280 g)
      • After the potatoes are done simmering, drain them and rinse under cold water. Then, transfer them to a small bowl.
        • Season the potatoes with olive oil, salt, onion powder, and garlic powder, tossing to coat them evenly.
          • 1 tbsp extra virgin olive oil (15 g)
          • 1/4 tsp salt (1.20 g)
          • 1/4 tsp black pepper, ground (1 g)
          • 1/2 tsp onion powder (1.50 g)
          • 1/2 tsp garlic powder (1.50 g)
        • On a separate plate or sheet pan, season the strip steak with olive oil, salt, and pepper, ensuring it is evenly coated on all sides.
          • 1 lb NY strip steak (450 g)
          • 1 tbsp extra virgin olive oil (15 g)
          • 1/4 tsp black pepper, ground (1 g)
          • 1/2 tsp salt (2.40 g)
            (diamond crystal kosher salt preferred)
        • Once the air fryer has finished preheating, place the steak and potatoes into the air fryer basket, arranging them as evenly apart as possible to ensure proper cooking.
          • Air fry the steak and potatoes for 5–8 minutes on each side, depending on the size of the steak. For the best accuracy, use a meat thermometer to check the internal temperature. Adjust the cooking time as needed to achieve your desired doneness.
            • After 5-8 minutes, flip the steak to cook the other side, leaving the potatoes as they are.
              • Remove the steak from the air fryer after the last 5-8 minutes or when the meat thermometer reads 125–130°F (51-54°C) for medium rare, let it rest for 5–7 minutes. During this time, carryover cooking will raise the internal temperature by an additional 5–10°F, ensuring the steak reaches your desired doneness.
                • After the steak has finished resting, slice it and serve alongside the potatoes. Top with flaky salt or your favorite sauce, and enjoy!
