80/20: Air Fryer Peking Duck
This is the easiest Peking Duck you could ever make that get’s you as close as you can to that legendary crispy skin, all in an air fryer... Oh, and you don't need to roast an entire duck or feel like an idiot blowing air into a duck with a bike pump — that's not a joke, that's exactly what the traditional recipe calls for.
Cooking doesn’t need to be hard or complicated. Often, you’re simply looking for a recipe that gets you most of the way there with minimal effort, hence 80/20.
I questioned if it was even possible to achieve anything close to the real deal in an air fryer, but as Steve Jobs once said “Stay hungry, stay foolish”. So I did a lot of homework, testing different seasonings, dry times, and cook times — and I think this is probably as close as you can ever get using just an air fryer.
Now to be perfectly clear, this method could never beat the real Peking duck you would find at a restaurant in Beijing — that would be a ridiculous claim, but it does give you remarkably crispy and delicious duck that will definitely satisfy your Peking duck craving.
